I asked my son what he would like to do with me this Summer and he said he would like to bake something with me. So I asked him to go through my cookbooks and find something. I gave him a few to choose from and he ended up choosing the Strawberry Roulade from the latest Great British Bake-Off book. I personally have only ever made meringue roulades so it was great to try something new.
The sponge was pretty straightforward, although I suspect my son’s ‘folding’ was not quite as gentle as it could have been.
While the sponge was cooling, he got on with the filling.
Cut up the strawberries.
Whip cream and fold in mascarpone.
Spread filling on cooled sponge. Sprinkle with strawberries.
Roll up carefully and enjoy!
